Spaghetti Squash
I tried roasting spaghetti squash tonight for the first time. Was excellent, I paired it with two different sauces. One recipe I got from a Facebook friend, it's called Mediterranean Skillet. You can click on the link to get the recipe. On Facebook they put chicken in the recipe, I didn't put chicken in and I also left out the olives. I put the skillet items on top of the spaghetti squash. It was great! I also made my almost homemade marinara sauce tonight. I added roasted eggplant and spinach to the sauce. Since I made two sauces I decided to add the marinara sauce on top of the skillet sauce. Wow, it was amazing!! I'm going to make this again! I also made a salad and served it with my white balsamic dressing.
I first put the whole squash in the microwave on high for 4 minutes. Then I cut it in half, took out the seeds, brushed olive oil on and sprinkled salt and pepper over it.
I placed them on a baking sheet like above and cooked on 375 degrees for 40 to 45 minutes.
This is how they looked when I took them out of the oven.
Then you just scrape the inside with a fork. It comes out looking like spaghetti.
I first put the skillet dish over the spaghetti squash. Loved it this way.

I also made a marinara sauce with eggplant and spinach.
I decided to combine my sauces over the spaghetti squash. Great dish!
We also had a salad with white balsamic dressing. Some wanted to add vegan parmesan cheese.
