Onion Rings

I tried a couple of new recipes yesterday. They are great game day eats! Would be good for the Super Bowl coming up to!

Beer Battered Onion Rings (These were sooooooo good)

Ingredients:

2 large sweet onions, sliced thick

1 cup self-rising flour + 1/2 cup more (I used gluten free flour and made it self rising myself, to make self rising flour you add 1 1/2 tsp baking powder and 1/2 tsp salt to 1 cup of flour, mix well)

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper

1/2 tsp black pepper

1 cup of beer (I used Coors)

Vegetable oil for frying

Directions:

Preheat vegetable oil for frying to 375 degrees. Combine onion rings with 1/2 cup self rising flour and toss to coat. In a separate bowl, combine 1 cup self rising flour, paprika, onion powder, garlic powder, cayenne pepper and black pepper. Whisk to combine. Stir in beer and mix well.

Dredge your onion rings in the flour bowl first then batter each one up individually in the beer mixture. Drop into the oil and flip during the cooking process and cook until golden brown. When done, take out and drain on paper towels or use a cooling rack.

I made a chipotle dipping sauce for them.

After you dredge the onions in the flour you dip them into this beer batter mixture.

After the beer batter drop them into the oil, cook and drain.
