Loaded Sweet Potato Nachos

I got this recipe from a friend on FB. I made a non vegan version with chicken and a vegan version with vegan cheese and no chicken. I made my own topping for it by using my black bean salad recipe but putting in avocado and tomato instead of the black beans.

Vegan in black skillet and non vegan in red skillet. Everyone was happy!
