I love adding roasted eggplant to my almost homemade marinara sauce. I also put some spinach in this sauce. Was sooooooo good!
Slice the eggplant in large pieces and brush with olive oil and sprinkle on salt and pepper. Put under the broiler (about 10 inches below) until they are golden brown.
After roasting cut the eggplant into pieces and add to your sauce.
I had two pots going. One with the eggplant and I left the other plain.
