Easy to make and very tasty! I use this on my vegan meatloaf recipe.
2 tbsp canola oil
3 yellow or sweet onions
1/4 cup nutritional yeast
1/2 cup flour (I used gluten free flour)
2 cups vegetable broth
3 tbsp soy sauce (I used gluten free)
1 tsp dried thyme
1 tsp garlic powder
salt and pepper
In a medium saucepan, heat oil over medium-high heat and saute onions until soft. Add nutritional yeast and flour, and stir for about 1 minute. The mixture will be dry. Add vegetable broth, soy sauce, thyme, and garlic powder. Continue to cook, whisking continuously, until mixture is very thick. Transfer gravy to a blender and puree until smooth (I used an immersion blender). Adjust seasonings and add salt and pepper to taste.
