I got this recipe from Marley Spoon. You can use it for Chipotle Night or just as a bean salad.
1 can black beans, drained and rinsed
2 cloves garlic, minced
4 Tbsp cilantro, chopped
1 oz chipotle chiles in adobo sauce (more or less according to your liking, I always use more), chopped
1 Tbsp of fresh lime juice
2 scallions, chopped
1 Tbsp olive oil
1 1/2 Tbsp red wine vinegar
Rinse and drain the beans. Combine beans with red wine vinegar, scallions, cilantro, garlic, chipotle, olive oil, lime juice and salt. stir well and serve.
