I grill some veggies and saute onions, peppers and mushrooms in oil and garlic. I make a creamy pesto sauce. I keep all in the fridge for whoever wants to pull them out and make a panini. The non vegans will add grilled chicken and some sort of cheese. The vegans use the creamy pesto sauce and sometimes add a balsamic glaze. Adding sliced tomato would be great too. Just assemble and put in the panini press!
My creamy pesto sauce. I use 1 cup raw cashews (soaked in hot water for 20 minutes), 1/4 cup unsweetened almond milk, 1 tsp oregano, salt and pepper, 2 cloves garlic minced, 1 tbsp of olive oil, 1 tbsp nutritional yeast, a handful of fresh basil and vegan parmesan cheese, I just sprinkle it in, you can add more or less upon the taste you prefer (we get ours at Whole Foods, you can see the brand in Shop My Favorites tab).

Grill whatever veggies you like.
Store the grilled veggies in the fridge for quick panini sandwiches.
