Vegan Chipotle Aioli
I used this as a dip for my beer battered onion rings.
3/4 cup raw cashews (soak them 1/2 hour in very hot water)
1/2 cup unsweetened almond milk
2 tbsp lemon juice
1/4 tsp salt
1 - 2 tsp agave
2 - 3 chipotle peppers in adobo sauce + 1 tsp adobo sauce (more or less to taste)
pinch of smoked paprika
1. Add cashews, almond milk, lemon juice, salt, agave, pepper and adobo sauce.
2. Blend until smooth.
