Chipotle Night At The Stilo's

One of my family's favorites. You can see there is chicken for the carnivores as well as cheese and sour cream for them also. You can add any toppings that you like. I have romaine lettuce, tomatoes, corn, salsa, red onion, tortilla chips, green peppers with red onions, white rice with lime and cilantro. I made a chipotle lime dressing and a black bean salad, see the recipes for these on my site. I'd like to tell you how I came about the recipe for the black bean salad. This was during my pre Vegan days. My family was tired of take out and the same old chicken dishes. My daughter, Katie (not vegan) does a lot of freelance work for Martha Stewart and told me about Marley Spoon, a food service company. I subscribed to it and was very happy to be trying new recipes and new ingredients I normally would not have tried. The meals were delicious and the family was happy (thank god!). When I turned vegan I started to alter the meals that came into vegan dishes, I started looking at vegan cook books and googling recipes and left Marley Spoon. I know there are vegan food service companies (Purple Carrot) but I've been using cook books and such and so far we are happy. If Marley Spoon comes out with a vegan service I would definitely try it. This is a fun meal to make, served buffet style, the family can choose what they like to put in their bowl or make a burrito.
